Will the 2N2222A work as a replacement, in the Color Picker RGB LED project, for the SS8050?
It appears as though it will work since it has a higher MAX Collector Current (1 A vs. 700 mA for the SS8050).
I don’t have enough experience with transistors to be sure.

According to the data sheet the 2N2222A can handle up to 800mA continuously so should work fine in that project.
