In your e-book for the ESP32-CAM, the photos were sent by telegram. Telegram has a bad reputation in DE for Nazis criminal and conspiracy groups. I would like to send the photos with Threema. How do I do that?

Unfortunately, we don’t have any tutorials with Threema, and I couldn’t find any information about how to use it with the ESP32.
Alternatively, you can use the tutorials that use the email. I know it’s not the same as texting your ESP32-CAM, but it is an alternative way to receive the photos and other data.
IFTTT has a service that allows you to send SMS to your ESP32. Unfortunately, I haven’t tested it, and I don’t have any tutorials about that.
