Is there an ESP32 (eg, DOIT Dev Kit) hardware mod that could help improve signal strength within a WiFi?   What about soldering a wire to the on board antenna?   My experience with some of the native boards hasn’t been reliable.

Hi.,
You can use an ESP32 board with an IPEX antenna connector to connect an external antenna.
I’ve find this tutorial that may be useful for what you want to do: https://www.instructables.com/id/ESP32-With-External-Long-Distance-Antenna/
Alternatively, you can use Wi-Fi boosters in your network.
I hope this helps.
Regards,
Sara
