Hello,
I have the following ESP32-WROVER board, https://www.makerfabs.com/esp32-3.2-inch-tft-touch-with-camera.html , with capactive touch. Wich board I have to choose when starting a new project in Visual Studio Code (Platfrom IO)?

According to the FAQ and Wiki you should be able to specify either “ESP32 Dev Module” or “ESP32 WROVER Module”. The display just uses a library that you’ll need to search for within PIO. There is probably another for touch screen.
