ESP8266 to control speed to 2 x 12V Fans

Hi everyone,
A newbie here. I’ve been looking up various posts around the best way to wire up my 2 x 12V DC fans for heat extraction. I am looking to increase or decrease the fan speed depending on an automation rule set by one of Home Assistant’s temperature sensors.
There are several solutions which talk about using a TIP 122 or IRF520 MOSFET to control the speed for the fan.
At 12V these fans draw about 0.5 Amps. I intend on initially running them at 5.0V (0.3 Amp current draw), and ramping up as necessary.
This is the part I need your advice on: which would be the best MOSFET to control the 12V fans?
I would really appreciate if anyone can point me in the right direction.

Hi.
I don’t have much experience using MOSFETS, but after searching for a while, I think the IRLB8721 works for what you want do do: https://www.adafruit.com/product/355
You may also want to take a look at the IRLZ44N.

I havw, for now, managed to get it working using an IRF520 module. 
 
Will consider your suggestion too.
