Now that these devices have been flashed and are working with local server, can they still be used with Alexa or Google home units? Are any other modifications required?

After your flash them, they are completely erased and they no longer work with the default App, Alexa or Google Home.
But you can upload a code to make them work with Alexa again using this project: https://randomnerdtutorials.com/alexa-echo-with-esp32-and-esp8266/
