I’ve been using the ESP32 with at least four DS18B20 temperature sensors and the LED and I began to wonder how many inputs and outputs will this device stand before it becomes problematic?  How can this be measured or determined?  Can five digital DS18B20 sensor, five digital outputs and five digital inputs along with MQTT and Node-Red be run on the ESP32 at one time?

It really depends on what you’re trying to do, but your ESP32 is more than capable of doing what you described reliably.
