Hello,
I am evaluating the three OTAs more frequently used: Basic Ota and WebUpdater that come with Arduino IDE, and ElegantOTA.

Two questions:

1 Which one to use

I see that Elegant is the only one that allows updating both firmware plus files.

On top of that, Which is the preferred or most usewd ones ?
A list in internet with pros and cons ?

2 How to connect when target and programmer browser are on different networks ?

In my sace the target device is an agriculture machive. So to do an update I need that the customer connects the wifi link os the ESP32 ot the hotspot access point of a cell phone.
Is there a simple solution to make the target ping reacheble from the programmer.
Samsung does not have – in my knowledge – any port forwarding solution.
VPN is doable, but requieres a montlhy cost for customers.

Unfortunately, I don’t have a list of pros and cons of each method.
It’s a matter of trying the available options and seeing which one you like most or which one is more suitable for you.
 
As for your second question, I believe IoT App Story might be suitable for your scenario. I never tried it, but I have heard good things about it. You can check it out here:https://iotappstory.com/
