Does anyone have an example to run the ESP32 in both Soft AP Mode and Station Mode?, can you run them both at the same time?

Yes, you can run them at the same time.
At the moment, we don’t have any specific example showing how to do that.
However, we have this tutorial with some useful wi-fi functions that might help:
