It seems to have a built-in Espressif ESP32, so I’m wondering if I can use it for this course.

No.. Unfortunately our course is exclusively dedicated to the ESP32. The Particle Argon does not use an ESP32 chip, it uses a ARM Cortex-M4F 32-bit processor @ 64MHz.
